Step 1
Warm your oven to 375ยฐF (190ยฐC). Grease a 24-cup muffin tin with some vegetable oil or line it with paper liners for easy cleanup. In a small bowl, mix together ketchup, Dijon mustard, brown sugar, and Worcestershire sauce until the sugar dissolves. Cover it and pop it in the fridge to chill while you get the meat mixture ready.
Step 2
In a large bowl, combine the ground beef, milk, 8 ounces of shredded Cheddar, bread crumbs, eggs, onion soup mix, chili powder, and paprika. Use your hands to mix everything well until itโs all evenly combined. Then, press the meat mixture firmly into the muffin cups, making sure to press out any air pockets.
Step 3
Bake the meat cups for 15 minutes, then take them out and spread a spoonful of the chilled sauce over each one. Pop them back in the oven for about 15 more minutes, or until theyโre cooked through and no longer pink inside. You can check with a meat thermometerโit should read 160ยฐF (70ยฐC).

Once theyโre done, sprinkle the remaining Cheddar on top of each cupcake and let them rest for about 10 minutes before serving. Enjoy!
