Tips To Improve This Recipe
- Cook the carrots until just tender to keep a slight bite.
- Warm the apricot preserve slightly before spreading for easier coating and better flavor.
Step 1
Heat your oven to 325Β°F (165Β°C). In a saucepan, bring the carrots and some water to a boil over high heat. Once boiling, lower the heat to medium, cover the pan, and let the carrots steam until theyβre just tenderβthis should take about 5 minutes.
Step 2
While the carrots are cooking, mix the apricot preserves, cornstarch, dried apricots, and raisins together in another saucepan. Warm this over medium heat, stirring occasionally, until the mixture starts to bubble, thickens, and turns clearβabout 2 to 3 minutes.
Step 3
When the carrots are done, drain off any water and stir them into the apricot mixture. Transfer everything to a baking dish and pop it in the oven. Bake until the sauce thickens up a bit more and takes on a light brown color, which should take around 15 minutes. Let it cool slightly before serving.
