Step 1
Set up a steamer basket inside a saucepan and pour in about 1 1/2 cups of waterβjust enough so itβs right below the steamer. Cover the pan and bring the water to a boil over high heat. Once boiling, add your sliced carrots, lower the heat to medium, cover again, and let them steam until theyβre tender but still have a bit of bite, around 4 to 6 minutes depending on how thick you sliced them. Before you drain the carrots, save about half a cup of the cooking water for later.

Warm up the olive oil in a skillet over medium heat. Turn the heat down to low, then add the salt, pepper, cinnamon, cumin, garlic, and thyme. Cook everything gently, stirring often, until the spices and garlic release their aromaβthis should take about 10 minutes. Pour in the reserved cooking liquid and add the bay leaf. Cover the skillet and let it simmer for 20 minutes so the flavors really meld.
Step 3
After that, toss the steamed carrots into the skillet, making sure theyβre well coated with the spiced sauce. Let them cook together for a couple of minutes until the carrots are heated through. Finish by squeezing some fresh lemon juice over the top and fish out the bay leaf before serving.
