Cooking Techniques
- Add a little bit of broth or sauce to keep the casserole moist while baking.
- Cover with foil during the first half of baking to prevent the top from browning too quickly.
Step 1
Warm your oven to 425 degrees F (220 degrees C). Bring about 3 cups of water to a boil in a medium pot, then add the peas. Let them cook for 2 to 3 minutes, stirring gently, until they're tender. Drain the peas and toss them into a large bowl.
Step 2
Add the shredded chicken, condensed soup, milk, and chopped onion to the peas, and give everything a good mix. In another bowl, stir together the stuffing mix and melted butter until itโs well combined.
Step 3
Take about three-quarters of the stuffing mixture and spread it evenly in a 2-quart casserole dish. Pour the chicken and pea mixture on top, then sprinkle the rest of the stuffing over everything. Cover the casserole and pop it in the oven. Bake until itโs heated through, which should take around 20 minutes.
