Why This Recipe Is So Easy To Love
Simple Cooking Tips
- Lightly toast the peanuts for extra crunch and flavor in the sauce.
- Warm the lettuce leaves slightly before filling to make them more pliable and easier to wrap.
Directions
Blend the peanut butter, hot water, Sriracha, soy sauce, and sesame oil in a bowl until smooth. Set the sauce aside for now. Heat a couple of tablespoons of sesame oil in a large skillet over medium-high heat. Toss in the mushrooms, green onions, and bell pepper, and cook them for about 4 minutes until they begin to soften. Next, add the cauliflower rice, shredded carrot, a splash of soy sauce, and some lime juice. Keep cooking everything together until the liquid has mostly evaporated, which should take around 6 minutes. To serve, spoon the cauliflower mixture into lettuce leaves, drizzle with the spicy peanut sauce, and sprinkle some fresh cilantro on top for a burst of flavor.
