Directions
Preheat your oven to 350°F (175°C). While it’s warming up, rub half a teaspoon of butter all over your soaked cedar plank to keep things from sticking. Take a paring knife and poke a few holes into each sweet potato, about half an inch deep. Pop the potatoes in the microwave on high for 8 to 10 minutes, or until they’re nice and soft. Once they’re cool enough to handle, peel them and toss the flesh into a bowl. Add in 2 tablespoons of butter, 2 tablespoons of Parmesan, some yogurt, and roasted garlic, then mash everything together until it’s smooth and creamy. Pile the mashed potatoes onto the cedar plank, spreading them out a bit. Bake in the oven for about 30 minutes, until the top turns a lovely golden brown. When they come out, drizzle with a tablespoon of melted butter, season with salt and pepper, and sprinkle on parsley, chopped onion, paprika, and the remaining Parmesan before serving.
