Tips For Perfect Results
- Chill the dough before rolling to prevent shrinking during baking.
- Avoid overfilling the tart shells to keep the filling from spilling over.
Step 1
Lightly heat your oven to 375°F (190°C) and lining a baking sheet with your tart shells. In a bowl, cream together the brown sugar and butter using an electric mixer until nice and smooth. Then, mix in the eggs, corn syrup, vanilla, lemon juice, and all those warm chai spices—cardamom, cinnamon, nutmeg, and ginger.
Step 2
Scatter the raisins evenly into the bottom of each tart shell, then spoon about two tablespoons of the spiced syrup mixture over them. Pop the tarts into the oven and bake until the pastry turns golden and the filling looks set, which should take around 20 minutes. Once done, let them cool on a wire rack before digging in.
