Warm your grill to medium and give the grates a quick brush with some oil to keep things from sticking. While thatβs warming up, mix together 2 tablespoons of olive oil, balsamic vinegar, Dijon mustard, a pinch of salt, and some pepper in a small bowlβthis will be your tasty dressing. Cut the radicchio into four wedges, then brush each piece with the remaining tablespoon of olive oil and sprinkle a little salt over them. Place the wedges on the grill and cook for about 3 to 4 minutes per side until they get a nice char. Once done, transfer them to a serving plate, scatter some pistachios and blue cheese over the top, and drizzle with your dressing. Serve it right away and enjoy!
