Directions
Heat a large pan over medium-high heat and cook the sausage until it’s nicely browned. Once done, transfer it to a plate lined with paper towels to drain the excess fat. In the same pan, add a little olive oil along with the chopped onion and garlic. Cook, stirring occasionally, until the onions turn soft and translucent, which should take about 3 to 5 minutes. Next, add the sausage back into the pan along with the chopped chayote squash and jalapeño peppers. Keep cooking and stirring until the squash starts to soften, around 10 to 15 minutes. Then, mix in the tomatoes, black beans, corn, thyme, and chili powder. Give everything a good stir and season with salt and pepper to taste. Let it cook for another 10 minutes or so, until everything is heated through and the flavors have melded together.
