Gently heat your oven to 400°F (200°C). Spread the sauerkraut evenly in the bottom of a 9-inch square glass baking dish. In a small bowl, mix together the reserved sauerkraut liquid, brown mustard, brown sugar, celery seed, and black pepper. Pour this mixture over the sauerkraut to give it some extra flavor. Next, layer the sausage slices on top, followed by a loose pile of frozen french fries. Pop the dish into the oven and bake until the fries turn a nice golden brown, which should take about 20 to 30 minutes. Once it’s done, let it cool for a few minutes before serving.
