Step 1
Gently heat your oven to 350ยฐF and either grease a 12-cup muffin tin or line it with paper liners. In a small bowl, mix the peaches, chopped basil, and a tablespoon of brown sugar. Let this sit for about 15 minutes so the sugar can melt into the fruit. Meanwhile, whisk together the flour, baking powder, baking soda, and salt in a large bowl. Stir in one cup of shredded Cheddar cheese.
Step 2
In another bowl, beat the butter and seven tablespoons of brown sugar until the mixture is smooth and creamy. Add the eggs one at a time, mixing just until combined after each addition. Gently fold the peach mixture into this wet batter. Then, gradually add the flour mixture, stirring just enough to bring everything together without overmixing.
Step 3
Scoop the batter into your prepared muffin cups, filling them almost to the top. Sprinkle the remaining quarter cup of Cheddar cheese over each muffin. Pop them in the oven and bake for about 25 minutes, or until a toothpick inserted into the center comes out clean. Let them cool a bit before enjoying!
