Step 1
Preheat your oven to 350Β°F (175Β°C). Chop up four of the bacon strips and cook them in a large skillet over medium heat, stirring often until theyβre nice and crispy, about 8 to 10 minutes. Set those cooked bits aside.

In a big bowl, gently mix together the ground beef, bread crumbs, egg, garlic, a teaspoon of Worcestershire sauce, salt, and pepper until everything is combined but not overworked. Lay the meat mixture out on a piece of waxed paper, shaping it into a roughly 10-inch square.

Spread the cheddar cheese and the cooked bacon evenly over the meat, leaving about a half-inch border around the edges. Carefully roll the meat up around the filling, using the wax paper to help, then place it seam-side down in a loaf pan.

Bake the meatloaf for about 30 minutes until itβs heated through and starting to brown. While itβs baking, mix together ketchup, brown sugar, pineapple, and another teaspoon of Worcestershire sauce until the sugar dissolves.

Take the meatloaf out of the oven and weave the remaining four bacon strips over the top. Spread the pineapple mixture over the bacon, then pop it back in the oven for another 20 minutes or so, until the bacon is crispy and the glaze has thickened. Check with a meat thermometerβit should read 160Β°F (70Β°C) when done. Let it rest a few minutes before slicing and serving.
