Step 1
Spray a 9-inch square baking dish with cooking spray. Arrange the bread slices in a single layer on the bottom of the dish. In a bowl, whisk together the milk, egg substitute, and chives, then pour the mixture evenly over the bread. Sprinkle the bacon crumbles on top. Cover the dish with plastic wrap and pop it in the fridge for at least 8 hours, or overnight if you can.

When you’re ready to bake, take the casserole out of the fridge and let it sit at room temperature for about 30 minutes. Meanwhile, preheat your oven to 350°F (175°C). Bake the casserole for 40 minutes, then sprinkle the cheese over the top. Return it to the oven and bake for another 5 minutes or so, until the cheese is melted and the casserole is set. Enjoy!
