Step 1
Fil a bowl with ice water and set it aside. Next, fill a saucepan with cold water, add a splash of vinegar and a pinch of salt, then heat it over medium until it’s just barely simmering. Lower the heat so the water stays at a gentle simmer.

Crack each egg into a small dish or ramekin first—this makes it easier to slide them gently into the water. Hold the dish close to the surface and slowly pour the egg in. Let the whites set for a minute or two, then carefully use a silicone spatula to lift the egg off the bottom so it doesn’t stick.

Cook the eggs until the whites are firm but the yolks are still soft—this usually takes about 6 minutes. When they’re ready, scoop each egg out with a slotted spoon and immediately transfer them to the ice water to stop the cooking.
