Put the onions and chillies in a pan with some water. Bring it to a boil, then cover and let it simmer for about 10-12 minutes until the onions are soft. Once cooled a bit, blend this mixture into a smooth paste.

Heat some oil in a pan until itβs hot. Add the chicken pieces and fry them until they turn golden brown. Sprinkle some salt, stir well, then take the chicken out and set it aside.

In the same pan, add a little more oil if needed and toss in the ginger-garlic paste. Cook it for about a minute until it smells amazing. Then add the onion and chilli paste you made earlier and cook for another 1-2 minutes.

Return the fried chicken to the pan and mix everything together well.

Meanwhile, grab a bowl and whisk the yogurt with cumin powder, pepper, coriander powder, and salt until smooth.

Pour this spiced yogurt into the pan with the chicken and stir well. Let it cook gently until you see the oil starting to separate from the sauce.

Finally, add some fresh chillies, onion rings, garam masala, and chopped coriander leaves. Give it one last good mix and youβre ready to serve!
