Step 1
Make the chicken broth. In a large pot, combine the chicken, garlic cloves, cinnamon stick, star anise, cloves, fennel seeds, coriander seeds, bay leaves, peppercorns, salt, cumin seeds, and enough water to cover everything. Bring it to a boil, then skim off any foam and strain the broth. Set the broth aside.

In another pot, heat some oil and sautΓ© the onions until they turn golden brown. Add the ginger-garlic paste and cook for about a minute until fragrant.

Stir in the tomatoes and cook for a couple of minutes until they soften. Then add the green chilies, yogurt, chili flakes, cumin seeds, and salt. Mix everything well.

Toss in the mint leaves and lemon slices, then pour in the chicken broth you made earlier. Give it a good stir to combine.

Add the soaked rice to the pot and bring it to a boil. Once boiling, sprinkle in some yellow food coloring, cover the pot, and let it cook on low heat for about 10 minutes until the rice is done.
