Warm your oven to 350°F (175°C) and lightly grease a 9x11-inch baking dish. In one bowl, mix together the crushed crackers, garlic powder, salt, and pepper. In another bowl, put the breadcrumbs, and in a third, beat the eggs.

Take each chicken breast and gently pound it until it’s nice and thin. Lay two strips of cream cheese and a tablespoon of diced jalapeño on top of each piece. Fold the chicken over to seal the filling inside.

Now, dip the stuffed chicken breasts first into the eggs, then coat them with breadcrumbs, dip back into the eggs, and finally press them into the cracker mixture. Place them in the baking dish and secure each one with a toothpick or some kitchen twine to keep everything together.
