Cooking Tips

- Grill the chicken over medium heat to avoid drying it out.
Step 1
Blend together the cilantro, club soda, olive oil, honey, lime zest, lime juice, salt, and pepper until the marinade is nice and smooth—about half a minute should do it. Next, place each chicken breast between two sheets of plastic wrap and gently pound them with a meat mallet until they’re about half an inch thick. Pop the chicken into a large bowl and pour the marinade over it, letting it soak up those flavors for around 20 minutes.
Step 2
While the chicken is marinating, get your grill heating up to medium and give the grates a light brush of oil to keep things from sticking. Now, mix together the tomatoes, strawberries, cilantro, green onions, jalapeño, lime juice, salt, and pepper in a bowl. Cover it and pop it in the fridge until you’re ready to eat.
Step 3
When the grill’s hot, cook the chicken for 3 to 5 minutes on each side, until it’s cooked through and no longer pink inside. Once it’s off the grill, spoon the fresh strawberry salsa over the top and enjoy!
