Kitchen Tricks
- Use a grill pan or outdoor grill preheated to medium-high heat for even cooking.
- Let the chicken rest for a few minutes after grilling to keep it juicy.
Step 1
Whisk the chiles, canola oil, cilantro, lime zest and juice, garlic, jalapeno, honey, salt, and pepper in a large freezer bag. Seal it up and give the bag a gentle squeeze to blend everything together. Then add the chicken, making sure each piece is well coated with the marinade. Pop it in the fridge and let it soak up all those flavors for at least 4 hours, turning the bag every now and then.
Step 2
When youโre ready to cook, heat up your grill to medium and brush the grate lightly with oil to keep the chicken from sticking. Take the chicken out of the marinade, shaking off any extra, and toss the leftover marinade. Grill the chicken with the lid closed, cooking it for about 4 to 6 minutes on each side until itโs cooked through and the juices run clear.
Step 3
Once itโs done, transfer the chicken to a plate and cover it loosely with foil. Let it rest for 4 to 5 minutes so the juices can settle back into the meat before serving.
