Heat a little oil in a skillet over medium-high heat. Cook the chicken until it’s nicely browned and no longer pink in the center, which should take about 8 minutes. Take it off the heat and let it cool for around 10 minutes.

Once the chicken has cooled, chop it up if you haven’t already, then mix it with grapes, celery, and mayonnaise in a bowl. Add some tarragon for extra flavor and season with salt to taste.
