What Makes This Recipe Special

This dish combines tender, juicy meat with a rich and flavorful peanut sauce. It’s quick to prepare and perfect for a weeknight dinner or a weekend barbecue. The balance of savory, sweet, and slightly spicy flavors makes it a crowd-pleaser.

Cooking Hints

- Marinate the meat for at least 30 minutes to enhance the flavor and tenderness.
- Preheat the grill well to get nice grill marks and prevent sticking.
- Let the steaks rest for a few minutes after grilling to keep them juicy.

Step 1

Combine the lemon juice, peanut butter, tomato puree, brown sugar, Worcestershire sauce, salt, black pepper, crushed red pepper flakes, and garlic in a large bowl until everything is smooth and well combined. Take your chicken breasts and, using a meat mallet or the bottom of a heavy plate, gently pound them until they're about half an inch thick. Toss the chicken into the marinade, making sure each piece is well coated. Cover the bowl with plastic wrap and pop it in the fridge to marinate for at least 30 minutes—if you have more time, letting it sit longer will only make it better.

Step 2

When you're ready to cook, heat some olive oil in a large, heavy skillet over medium-high heat until it’s really hot. Take the chicken out of the marinade, shaking off any excess, and discard the leftover marinade. Cook the chicken in the hot oil, about 6 to 8 minutes on each side, until the juices run clear and the meat is nicely browned. The chicken might stick a little because of the sugar and peanut butter, but that’s okay—it actually gives it a nice, slightly charred flavor. Serve warm and enjoy!

How To Present This Dish

Serve with steamed jasmine rice or a light cucumber salad to complement the rich peanut sauce. Fresh herbs like cilantro or mint add a refreshing touch. A side of grilled vegetables also pairs nicely.

How To Store Leftovers

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave to avoid drying out the meat. The peanut sauce can be stored separately to keep its texture fresh.
