Step 1
In a bowl, combine the chicken with yogurt, salt, pepper, paprika, cumin seeds, coriander powder, chili powder, chili flakes, chaat masala, and oregano. Mix everything well and let it marinate for about 15 minutes.

Heat 2 tablespoons of oil in a pan over medium heat. Add the chopped garlic and sauté for 1-2 minutes until fragrant. Then add the marinated chicken and cook for 10-15 minutes until it's cooked through.

Toss in the chopped tomatoes, capsicum, and onions. Stir everything together and cook for another 3-4 minutes. Turn off the heat and set it aside.

Heat a griddle or pan with about half a teaspoon of oil. Toast the pita or shawarma bread on both sides until golden and slightly crispy.

Place one piece of toasted bread on a baking dish. Spread mayonnaise evenly over it, then add the chicken mixture. Sprinkle some cheese on top and cover with the second piece of bread. Spread tomato paste over the top, add more cheese, chili flakes, oregano, capsicum, and olives.

Bake in a preheated oven at 180°C for about 10 minutes until the cheese melts and everything is heated through.
