What Makes This Recipe So Good
Smart Cooking Tips
- Use fresh ginger and garlic for the best aromatic impact.
- Cook over medium-high heat to get a nice caramelization without drying out the chicken.
Step 1
Gently heat some oil in a wok or a large skillet over medium-high heat. Toss in the chicken and carrots and cook them until the chicken is cooked through and the carrots have softened a bit, which should take about 5 minutes. Then, add the garlic and ginger, stirring everything together for another minute until fragrant. Next, throw in the shallots and bell pepper and cook for one more minute.
Step 2
Meanwhile, whisk together 3 tablespoons of the liquid from the canned pineapple chunks with the pineapple pieces, water, soy sauce, cornstarch, vinegar, and a pinch of pepper flakes. Pour this mixture into the pan with the chicken and veggies. Keep stirring as it comes to a boil, letting the sauce thicken and coat everything nicely. Once the sauce is glossy and thickened, itβs ready to serve.
