- Marinate the chicken for at least 30 minutes to let the spices soak in.
- Cook the chicken on medium heat to keep it juicy and tender.
Step 1
Cut one chicken breast into strips. In a bowl, combine the chicken with soy sauce, vinegar, cornflour, salt, and pepper. Give it a good mix to coat everything evenly.

Heat some oil in a pan over medium heat. Fry the chicken strips until they turn golden brown and are cooked through. Once done, take them out and set aside.

In the same pan, add the onions and both red and green capsicum. Cook them for a minute, then season with a little salt and pepper. Let it cook for another 2-3 minutes until the veggies soften.

Pour in the soy sauce, vinegar, and ketchup. Stir everything together and let it cook for a couple of minutes so the flavors blend.

Add the cooked chicken back into the pan, mix it all well, then turn off the heat.

Sprinkle with chopped spring onions before serving. Enjoy it with some steamed rice!
