Step 1
Mix together the honey, tomato paste, apple cider vinegar, Sriracha, and sesame oil in a medium bowl. In a separate small bowl, combine the cold water, cornstarch, and half a teaspoon of salt, then stir this into the honey mixture until itβs smooth. Set this sauce aside for now.
Step 2
Season the chicken with a quarter teaspoon each of salt and garlic powder. In a large bowl, whisk the egg along with the remaining salt and garlic powder. Add the flour and mix well. Then, combine the water and cornstarch in another bowl and stir that into the egg mixture. Finally, add the avocado oil and baking powder, giving it a good mix until everything is fully incorporated.
Step 3
Heat about three inches of peanut oil in a wide, deep pot to 325Β°F (165Β°C). Dip half of the chicken pieces into the batter, making sure theyβre well coated. Carefully drop spoonfuls of the battered chicken into the hot oil, working in batches so you donβt crowd the pan. Fry each side for about a minute or until the chicken is golden and cooked through. Use a slotted spoon to transfer the fried chicken to a plate lined with paper towels. Keep an eye on the oil temperature between batches to maintain the heat.
Step 4
Once all the chicken is fried, pour the honey sauce into a large skillet and heat it over medium until it starts to simmer, about 3 to 4 minutes. Add the chicken pieces to the sauce and toss them gently to coat evenly. Finish by sprinkling sesame seeds over the top before serving.
