Step 1
Lightly heat your oven to 350°F (175°C) and grease two baking sheets well. In a large bowl, cream together the butter, brown sugar, egg, peanut butter, and vanilla until everything is nice and smooth. In another bowl, whisk together the chickpea flour, cornstarch, baking powder, and salt. Add the dry ingredients to the wet and mix until it forms a dough. Then, gently fold in the oats, chocolate chunks, and nuts.

Pop the dough in the fridge for at least 15 minutes to firm up. When you’re ready, scoop out heaping tablespoons of dough and place them on your baking sheets, giving them some space to spread. Bake for about 10 to 13 minutes, or until the edges turn golden brown. Let the cookies sit on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
