Chef's Cooking Tips
- Use a mix of chili powders and spices for a balanced heat and complexity.
- Let the chili simmer slowly to allow the flavors to meld together.
Directions
Heat some bacon grease in a large pot over medium-high heat. Once itβs hot, add the ground beef and cook, stirring now and then, until itβs mostly brownedβthis should take about 5 minutes. Turn the heat down to medium, then toss in the chopped onion. Cook it with the beef, stirring occasionally, until the onion softens and becomes translucent, which usually takes another 5 minutes. Next, add the garlic along with chili powder, paprika, oregano, salt, and pepper. Stir everything together and let the spices cook for 2 to 3 minutes until you can really smell their aroma. Pour in the tomato puree, water, tomato paste, and sprinkle in the sugar. Crumble in the bouillon cube and give it all a good stir. Lower the heat to a gentle simmer, cover the pot, and let it cook for at least 30 minutes, stirring once in a while. If you have time, letting it simmer up to an hour will deepen the flavors even more.
