Gently heat your oven to 400°F (200°C) and either grease a 12-cup muffin tin or line it with paper liners. In a large bowl, mix together the chocolate chips, brown sugar, flour, cocoa powder, baking soda, baking powder, and salt. In another bowl, whisk the soy milk, oil, applesauce, eggs, vinegar, and vanilla extract until everything is well combined. Pour the wet ingredients into the dry and gently stir just until everything is mixed—don’t overdo it. Divide the batter evenly among the muffin cups, filling each about three-quarters full. Pop them in the oven and bake for 20 to 25 minutes, or until a toothpick comes out clean when you test the center. Let the muffins cool for a bit before digging in!
