Step 1
Heat your oven to 350°F (175°C) and lining a baking sheet with parchment paper. In a food processor, pulse the almonds and walnuts until they’re chopped into small pieces. Then, gradually add the dates and cranberries, blending as you go until everything is combined but still has some texture. Toss in the coconut, cocoa powder, and vanilla extract, and pulse a few more times until you reach the consistency you like.

Shape the mixture into a log about 2 inches wide, then slice it into ten pieces, each roughly 3/4 inch thick. Arrange the pieces on your prepared baking sheet, giving them a little space. Pop the tray into the oven and bake for about 10 minutes, or until the bars feel set to the touch. Let them cool a bit before enjoying!
