Directions
Bring a large pot of salted water to a boil. Cook the orzo in the boiling water, stirring now and then, until itβs tender but still has a bit of biteβthis usually takes about 11 minutes. Drain the pasta and transfer it to a big bowl. While the orzo is still warm, stir in the pesto and a squeeze of lemon juice, making sure everything is nicely coated. Then, fold in the tomatoes, mozzarella balls, and pepperoni strips. Cover the bowl and pop it in the fridge for at least 8 hours or overnight so the flavors can really come together. Just before youβre ready to serve, toss in the fresh basil for a bright, fresh finish.
