Step 1
In a bowl, whisk together the marmalade, water, soy sauce, mojo criollo dressing, brown sugar, orange juice, ginger, garlic powder, and orange zest. Pour about a cup of this marinade into a large resealable plastic bag, then add the chuck steak. Seal the bag and turn it around a few times to make sure the meat is fully coated. Pop it in the fridge and let it soak up all those flavors for at least 8 hours, or overnight if you have the time. Cover the rest of the marinade and keep it in the fridge.
Step 2
When youβre ready to cook, take the steak out of the bag and discard the marinade it was in. Heat up your grill to medium and give the grates a quick oiling so nothing sticks. Grill the steak, flipping every 5 to 10 minutes or so, and keep basting it with the reserved marinade to keep it juicy and flavorful. Cook until it reaches about 140Β°F in the center for a nice medium doneness. Once done, let it rest a few minutes before slicing and serving.
