Gently heat some oil in a skillet over medium heat, then add the chopped onion. Cook it, stirring occasionally, until it’s soft and translucent—this usually takes about 5 minutes. Next, toss in the couscous and keep stirring until it turns a nice light brown color.

Pour in the water along with the bouillon, cinnamon, garam masala, and a bay leaf, then bring everything to a boil. Once it reaches a boil, lower the heat, cover the pan, and let it simmer gently until the water is mostly absorbed, about 8 to 10 minutes.

After that, stir in the cranberries, broccoli, and almonds. Put the lid back on and let them steam for a few minutes until the broccoli softens, around 3 minutes. Finally, season with salt and pepper to taste, sprinkle on some fresh parsley, and serve it warm.
