Step 1
Mix the flour, cinnamon, baking powder, and salt together in a bowl. In a separate bowl, cream the butter and sugar with an electric mixer until the mixture is light and fluffy. Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract. Then, gradually add the flour mixture to the wet ingredients and gently mix everything by hand until you have a smooth dough.

Divide the dough into four equal parts and flatten each into a round about an inch thick. Wrap them in plastic and pop them in the fridge for about an hour to chill.

When you're ready to bake, preheat the oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper. Lightly flour your work surface, roll out the dough to about a quarter-inch thick, and use your favorite cookie cutters to cut out shapes. Place the cookies on the prepared sheets with a little space between them.

Bake for 8 to 10 minutes, or until the edges just start to turn golden. Let the cookies cool on wire racks before decorating however you like.
