Step 1
Heat your oven to 350°F (175°C). In a bowl, mix together the brown sugar, butter, cinnamon, and nutmeg until well combined. Core each apple carefully, leaving the bottom intact so you have a little well to fill. Stuff each apple with the brown sugar mixture, filling it almost to the top. Then, add a few blueberries on top, cover with a bit more of the sugar mix, and press some raisins into it.

Pour enough water into a shallow baking dish to cover the bottom, then stir in the walnuts, rum, vanilla extract, and cornstarch until everything is mixed well. Place the apples in the dish, spooning some of the liquid around them, and cover the whole thing with aluminum foil.
Step 3
Pop the dish into the oven and bake for about 20 minutes, until the apples start to soften. Take off the foil and bake for another 15 minutes or so, until the sugar on top starts to caramelize and the sauce thickens. Give the sauce a good stir and spoon it over the apples before letting them cool for a few minutes. Then, dig in and enjoy!
