Stir together the garlic, brown sugar, thyme, rosemary, allspice, salt, and pepper in a bowl. Pat the chicken thighs dry, then rub the spice mixture all over them. Pop the chicken in the fridge to marinate for about 30 minutes.

When you're ready, heat some olive oil in a skillet over medium-high heat. Place the chicken thighs skin-side down and cook until the skin turns nice and crispy, which should take around 4 minutes. Flip the thighs over, then pour chicken stock around them in the pan.

Squeeze the juice of one lemon into the skillet, and slice the second lemon to lay right on top of the chicken. Cover the skillet and let everything simmer gently until the chicken is cooked through—this usually takes about 30 minutes. To be sure, check that the internal temperature near the bone reads 165°F (74°C).

Once done, discard the lemon slices and serve the chicken warm.
