Step 1
Heat some vegetable oil in a large pot or Dutch oven over medium heat. Once the oil is hot, add the chopped onion, celery, and garlic, and cook them gently for about 5 minutes until theyβre soft and fragrant. Next, add the ground beef to the pot and cook it, breaking it up with a spoon, until itβs nicely browned and no longer pink, which should take around 5 to 10 minutes. Drain off any excess grease to keep things from getting too oily.

Now, stir in the diced tomatoes, tomato sauce, water, Worcestershire sauce, chili powder, garlic powder, oregano, salt, and pepper. Bring everything up to a boil, then turn the heat down to medium-low. Cover the pot and let it simmer gently, stirring every now and then, for about an hour and a half so all the flavors have time to meld together.

About 10 minutes before youβre ready to serve, toss in the kidney beans and let the chili simmer uncovered. This gives the beans a chance to heat through and soak up some of that delicious flavor. Once thatβs done, give it a taste, adjust the seasoning if needed, and enjoy!
