Step 1
Heat some oil in a large pot over medium-high heat. Toss in the onion, bell pepper, and jalapeño, and cook them until they’re nice and soft, about 5 minutes. Then add the garlic and stir it around for about a minute until you can really smell it.

Drain the liquid from the tomatoes into the pot. Chop up the tomatoes and add them in. Pour in the chicken broth along with the rice mix and the seasoning packet. Cover the pot and bring everything to a boil. Once it’s boiling, lower the heat and let it simmer gently until the rice is cooked through, about 25 minutes.

After that, add the sliced sausage and let it cook for another 5 minutes. Finally, stir in the shrimp and cook just until they turn bright pink and opaque, which should take about 3 minutes. Enjoy!
