Gently heat your oven to 350Β°F (175Β°C) and greasing a 9-inch square baking dish, then lightly flour it so the cake doesnβt stick. In a large bowl, cream together the butter and superfine sugar until the mixture is smooth and fluffy. Crack in the eggs one at a time, mixing well after each addition so everything blends nicely. In a separate small bowl, mix the baking soda into the sour cream, then stir this into the butter mixture until itβs all combined.

Fold in the mashed bananas, followed by the cake flour and baking powder, mixing until smooth. Add the vanilla extract and give it one last stir. Pour the batter into your prepared dish. In another bowl, toss together the pecans, brown sugar, and cinnamon, then sprinkle this topping evenly over the batter.
