Why This Recipe Stands Out
Cooking Pointers
- Use a small spoon or your thumb to create the indentations gently, so the cookies keep their shape.
- If the pumpkin puree is too wet, drain it slightly to avoid a soggy dough.
Step 1
Heat your oven to 350°F (175°C) and line two baking sheets with parchment paper. In a bowl, combine the whole wheat flour, cinnamon, baking powder, baking soda, nutmeg, and salt. In another bowl, whisk together the pumpkin, honey, melted butter, and vanilla until everything is smooth. Pour the wet ingredients into the dry and stir just until everything comes together.
Step 2
Scoop the dough onto the prepared sheets using two spoons or a cookie scoop. Then, lightly flour your finger and press a small dimple into the center of each cookie. For the filling, mix the walnuts, butter, and honey until well combined, and spoon a little of this walnut mixture into each cookie’s center.
Step 3
Pop the cookies into the oven and bake for about 15 minutes, or until the edges start to firm up and get a bit golden. Let them cool slightly before enjoying!
