Combine the brown sugar, salt, crushed red pepper flakes, mint leaves, and brandy in a bowl until it forms a paste. Rub this mixture all over the salmon, then wrap it tightly in plastic wrap and pop it in the fridge for at least 4 hours, or even overnight if you have the time.

When youβre ready to cook, fire up your outdoor grill to high heat and give the grate a light coating of oil to prevent sticking. Soak some alder wood chips in water, then place them in a small disposable foil pan or make a little pouch out of foil. Set this at the back of the grill, underneath the grate, so the chips can start smoking.
Step 3
Once you see the smoke coming, turn the grill down to its lowest setting. Put the salmon directly on the grate, close the lid, and let it cook slowly. It should take about 45 minutes to develop a nice red-brown color and flake easily when itβs done. Enjoy that smoky flavor!
