Heat your oven to 350°F (175°C) and lightly spray a glass baking dish with some vegetable cooking spray. Season the chicken with a bit of salt and pepper. In a skillet over medium-high heat, warm up the oil and brown the chicken on both sides until golden. Once browned, transfer the chicken to your prepared baking dish. In a small bowl, mix together the tomato sauce and taco seasoning, then pour this mixture evenly over the chicken. Sprinkle the cheeses on top, making sure they cover the chicken well.
