Step 1
Cook the bacon in a small nonstick skillet over medium heat until it’s nice and crispy, about 4 to 5 minutes. Once it’s done, transfer the bacon to a paper towel-lined bowl to drain, but keep the bacon grease in a small bowl for later.

Heat the skillet over medium-high and add a teaspoon of that reserved bacon grease. Toss in the mushrooms and green onions, cooking them until they’re lightly browned, about 3 to 4 minutes. Season with a little salt and pepper, then move the mixture to a small bowl and keep it warm.
Step 3
Add another teaspoon of bacon grease to the skillet and scramble the eggs over medium-high heat until they’re fully cooked, around 2 to 3 minutes. Don’t forget to season the eggs with salt and pepper, then remove them from the heat and keep warm as well.
Step 4
Spoon the cottage cheese into a microwave-safe bowl and warm it up at half power for 1 to 1.5 minutes, stirring halfway through. Drain off any extra liquid, then arrange the cottage cheese on one side of your serving bowl. Add the scrambled eggs on the other side, top with the mushroom and green onion mix, and sprinkle the crispy bacon on top. Serve it right away and enjoy!
