Step 1
Lightly heat your oven to 350Β°F (175Β°C) and cutting two pieces of parchment paper to fit your baking sheet. Lay one piece of parchment on a clean, flat surface, then gently place a sheet of phyllo dough on top. Brush it lightly with melted butter, being careful not to tear the delicate dough. Add another phyllo sheet, press down to smooth out any air bubbles, and brush with butter again. Keep layering and buttering three more sheets the same way. When you get to the fifth sheet, swap the butter for egg white, then sprinkle half of the everything seasoning mix over it.
Step 2
Using a pizza cutter, slice the layered phyllo into about 40 squaresβor whatever shapes you like. Carefully transfer the whole parchment sheet with the cut dough onto your baking tray. Pop it into the oven and watch closely as it bakes for 6 to 8 minutes, until it turns a nice golden brown. These can brown quickly, so donβt walk away!
Step 3
Once baked, take the parchment off the tray and let the crackers cool. Then, repeat the whole process with the rest of your ingredients. Enjoy them right away or keep them fresh in an airtight container at room temperature.
