Why This Dish Is Amazing
Cooking Pointers
- Use fresh or dried figs depending on what you have; dried figs will give a richer taste.
- Avoid lifting the lid too often during cooking to keep the temperature steady and ensure the meat stays tender.
Directions
Gently heat a skillet over medium-high heat. Once hot, quickly sear the pork chops for about a minute on each side until they get a nice light brown color. Then, transfer the chops to your slow cooker. In a saucepan, mix together the cranberries, figs, reserved fig juice, apple juice, brown sugar, salt, pepper, and rosemary. Bring this mixture to a boil, then pour it over the pork in the slow cooker. Cover and cook everything on high for about 4 hours, until the pork is tender and the flavors have melded together.
