Turn on your Instant Pot and selecting the sauté setting. Melt the butter in the pot, then toss in the garlic and cook it just until it smells amazing, about 30 seconds. Add the cauliflower florets and stir them around so they get coated in the buttery garlic—let them cook for about 5 minutes until they start to soften. Pour in the broth, close the lid, and set the pot to high pressure for 5 minutes. Once the cooking time is up, let the pressure release naturally for about 3 minutes, then carefully switch to quick release to let out any remaining steam. When it’s safe to open, mash the cauliflower right in the pot using a potato masher or an immersion blender until it’s nice and creamy. Stir in the Parmesan cheese, then season with salt and pepper to taste. Give everything one last mix and it’s ready to enjoy!
