Directions
Lightly spray your slow cooker with cooking spray to prevent sticking. In a large bowl, combine the oats, half a cup of brown sugar, cinnamon, and nutmeg. Mix in the pumpkin until everything is well combined. Slowly stir in the water and half-and-half, then add the raisins and vanilla extract, giving it a good stir. Pour the mixture into the slow cooker and set it on low. Let it cook for about 7 and a half to 8 and a half hours, until the oats are soft and creamy. When it’s done, sprinkle the top with a little extra brown sugar and some chopped walnuts for a nice crunch. Serve warm and enjoy!
