First, heat your oven to 450Β°F (230Β°C) and grease a large nonstick baking dish. In a big bowl, toss together the potatoes, bell peppers, onion, basil, and garlic. Drizzle with a bit of olive oil, then sprinkle on some salt, black pepper, and paprika. Give everything a good mix so the veggies are nicely coated. Spread the mixture out in a single layer on the baking dish. Pop it in the oven and bake until the potatoes are golden and tender, which should take about 45 minutes to an hour. Once theyβre done, take the dish out and sprinkle the Cheddar cheese over the top. Slide it back into the oven for another 5 minutes to let the cheese melt. Serve warm and enjoy!
