Step 1
Fil a large bowl with room-temperature water. Dip one rice wrapper into the water and let it soak for about 15 seconds, just until it’s soft and easy to bend. Lay the wrapper flat on a clean surface.
Step 2
Across the center, place a small handful of lettuce, a few strips of cooked chicken, and some slices of red bell pepper, leaving about two inches free on each side. Fold the sides over the filling, then roll everything up tightly starting from the end with the lettuce.
Step 3
Repeat this process with the remaining wrappers and filling. Once all your rolls are ready, slice them in half and serve with Caesar dressing on the side for dipping. Enjoy!
