Slic the cucumber halves lengthwise into thin, long slices—about 1/8 inch thick—using a mandoline or a sharp knife. In a bowl, mix together the chicken, Neufchatel cheese, mayonnaise, green onions, tomato, red pepper flakes, and garlic salt until everything is nicely combined. Lay the cucumber slices flat on your work surface and spoon about two teaspoons of the chicken mixture onto the bottom edge of each slice. Carefully roll the cucumber slices up around the filling and secure each one with a toothpick. Stand the rolls upright on a plate, like little cups, and gently push a Pretzel Crisp halfway into the chicken filling to finish.
