Directions
Gently heat some vegetable oil in a large saucepan over medium heat. Add the onions and cook them slowly, stirring often, until they turn a deep golden brownโthis should take about 10 to 15 minutes. Next, pour in the wine and let it simmer until itโs reduced by half, which will only take a minute or so. Take the pan off the heat, then stir in the currant jelly, orange juice and zest, lemon juice and zest, brown sugar, black pepper, mustard powder, ginger, cayenne, and a pinch of salt. Give everything a good mix until itโs well combined. Finally, return the sauce to the heat and bring it to a gentle boil, then take it off the heat and itโs ready to serve.
